Sweet Peanut Tofu Salad*

This is awesome, nutritionally balanced, and has become one of my potluck standards.

Peanut Sauce:
1/3 cup pb
2 Tbs honey or agave
1.5 Tbs soy sauce
1 Tbs white or cider vinegar
2 grated or finely minced cloves of garlic
1/2 tsp grated fresh ginger, or 1 tsp ground ginger
1.5 tsp ground cumin
1 tsp sesame oil (or canola oil will do)

Whip it up thoroughly, taste, adjust as necessary, and then toss with the other 3 components:

Sautee'd tofu cubes (sautee cubes in oil, garlic, and soy sauce, flipping once so at least 2 sides get crispy)
Raw or steamed veggies (snow peas are my favorite; also good are radishes, carrots, broccoli, cauliflower, peas, green beans, squash, etc. etc. etc.)
Grain base of choice (pasta, rice, quinoa, etc. etc. etc.)


*(Formerly known as "Thai Peanut Tofu." But I don't actually know if this is very Thai; it's more based on sweet sesame noodles from "Chinese" restaurants, and who knows where those come from either.)
