Now, here's an idea I have recently unveiled to others after many delighted solo nommings, and seen some seriously elevated eyebrows in response. But it is NOT crazy. I swear. Think about it: cottage cheese is a basic fresh cheese product, like mozzarella. It is low in sodium, tangy, and melts just enough without exuding grease. Now, I will note that I've done this with an exceptionally fresh and pure local raw milk cottage cheese, and the melting and flavor of a store brand will depend on how much extra shit has been added -- for best results, do get something as pure as possible and none of that lowfat bunk. Then spread the following on a tortilla or pita and pop in in the toaster oven or on top of a grill for a less-kitchen-heating summer alternative to homemade pizza dough.
garlic oil
cottage cheese
soysage crumbles (recommend gimme lean brand, or, if you are lucky enough to find it, an spicy Italian sausage-style crumble)
garden peppers and tomatoes, chopped
fresh herbs--whatever you've got
a few chopped kalamata and/or green olives
