Easy peasy skillet meal with a sweet and savory twist.
Just chop and sautee all together: 2 gloves garlic, 1 bunch baby kale, 1 diced plum, 1 diced apple. After tossing, turn heat to low and cover so the kale steams for 5-8 min. Once kale is near desired consistency, remove lid and allow to cook off a little of the liquid. Then add 1 c. BBQ seitan* chunks and another 1/4 c. BBQ sauce. Serve over grits or cornbread.
*I get these prepped from the store, or make them using the Veggeroni recipe, cut the spices, flavor with BBQ sauce/paprika/pepper, and steam cook for a chewier consistency.
