Summery Bazerghan Salad


Cook 1-2 cups bulgar wheat and allow to cool COMPLETELY for best flavor. Toss in a marinade of 2-3 Tbs. oil, 2-3 Tbs. lemon, 2-3 cloves crushed garlic, 1 tsp. cumin, 1/4-1/3 c. tomato paste, salt, paprika, and your favorite herbs. Add 1 can butter beans, 1 cup favorite summer veggies (chopped), and 1 package of fresh goat cheese and stir. Serve chilled.

Great filling for pita sandwiches, as a side dish, or topped with veggie sausage or hard boiled eggs as an entree. Great to make ahead for the week.
